Ingredients (Makes 6 slices)

  • 1 ½ cups shredded mozzarella cheese
  • 2 oz cream cheese
  • ¾ cup almond flour
  • 1 large egg
  • 2 cloves garlic, minced
  • ½ teaspoon garlic powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons butter (melted)
  • 1 tablespoon chopped fresh parsley (or 1 teaspoon dried)
  • 2 tablespoons grated Parmesan cheese (optional topping)

Instructions

1. Preheat Oven

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Make the Dough

In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 45 seconds, stir, then microwave an additional 30 seconds until melted and smooth.

3. Mix Ingredients

Add almond flour, egg, garlic powder, baking powder, salt, and minced garlic to the melted cheese mixture. Stir until a dough forms (it will be sticky — that’s okay!).

4. Shape the Flatbread

Place the dough between two sheets of parchment paper. Roll it into a rectangle about ¼ inch thick. Transfer the rolled dough (with bottom parchment) to the baking sheet.

5. Bake

Bake for 10–12 minutes until the edges are golden.

6. Add Garlic Butter

Remove from oven and brush with melted butter. Sprinkle with parsley and grated Parmesan if desired.

7. Finish & Serve

Return to the oven for 2–3 more minutes. Slice and serve warm.
