Ingredients:
- 1 pound ground beef (or ground turkey for a leaner version)
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce (low sodium)
- 2 tablespoons hoisin sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/4 cup green onions, chopped (for garnish)
- 1/2 cup water
- 8 oz noodles (egg noodles, ramen, or lo mein)
- 1 tablespoon sesame oil
- Sesame seeds, for garnish (optional)

Instructions:
- Cook the noodles: Bring a large pot of salted water to a boil. Cook the noodles according to the package instructions (about 4-5 minutes for most types). Drain and set aside.
- Cook the ground beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and cooked through (about 5-7 minutes). Drain excess grease if necessary.
- Make the sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, brown sugar, rice vinegar, water, and red pepper flakes (if using).
- Sauté the garlic and ginger: Push the cooked beef to one side of the skillet. In the same skillet, add the minced garlic and ginger to the empty side and sauté for about 1 minute until fragrant.
- Combine: Pour the sauce mixture into the skillet with the beef, stirring everything together. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly and coat the beef.
- Toss the noodles: Add the cooked noodles to the skillet and toss everything together, making sure the noodles are evenly coated in the sauce.
- Finish and serve: Drizzle with sesame oil and give everything a final toss. Garnish with chopped green onions and sesame seeds (if desired).
- Serve hot and enjoy your savory, sweet, and spicy Mongolian Ground Beef Noodles!
Tips:
- Add veggies: For extra flavor and nutrition, toss in some bell peppers, carrots, or broccoli. You can sauté them with the garlic and ginger before adding the beef.
- Spicy version: If you like more heat, increase the red pepper flakes or add some sriracha or chili paste to the sauce.
- Noodle variations: Feel free to use any type of noodles you prefer—egg noodles, ramen, or lo mein noodles all work well in this dish.
