- 2 slices of bread (preferably sourdough or Italian)
- 2 tablespoons butter (for grilling)
- 4-5 slices of pepperoni
- 2 slices of mozzarella cheese (or shredded mozzarella)
- 2 tablespoons pizza sauce (plus more for dipping)
- 1 tablespoon grated Parmesan cheese (optional)
- Dried oregano (optional)
- Crushed red pepper flakes (optional)

Instructions:
- Prep the bread: Spread butter evenly on one side of each slice of bread. These will be the outer sides for grilling.
- Assemble the sandwich: On the unbuttered side of one slice of bread, layer the mozzarella cheese, followed by the pepperoni slices. Spread a thin layer of pizza sauce on top of the pepperoni and sprinkle with Parmesan cheese and oregano (if desired).
- Close the sandwich: Place the second slice of bread on top, with the buttered side facing out.
- Grill the sandwich: Heat a skillet or griddle over medium heat. Place the sandwich in the pan and grill for 3-4 minutes on each side, or until golden brown and the cheese has melted.
- Serve: Remove from the skillet, cut in half, and serve with extra pizza sauce for dipping.
Notes:
- You can customize this grilled cheese with different types of cheese like cheddar, provolone, or a blend.
- For extra flavor, try adding a sprinkle of garlic powder or Italian seasoning to the butter before grilling.
- Use a panini press for an even crispier sandwich!
