- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil

- 1/2 teaspoon paprika
- 8 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 tablespoon fresh thyme or rosemary (optional, for extra flavor)

Instructions:
- Prepare the chicken: Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika on both sides.
- Cook the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, until golden brown and cooked through (internal temperature of 165°F or 75°C). Remove the chicken from the skillet and set it aside.
- Make the creamy sauce: In the same skillet, reduce the heat to medium. Add the cream cheese and cook, stirring, until it starts to melt and combine with the pan drippings. Stir in the mozzarella, Parmesan, and heavy cream, and cook for 2-3 minutes, until the sauce is creamy and smooth.
- Combine chicken and sauce: Return the cooked chicken to the skillet, spooning some of the sauce over each piece.
- Bake the chicken: Transfer the skillet to the oven and bake for 15-20 minutes, until the chicken is fully cooked and the sauce is bubbly.
- Serve: Garnish with fresh parsley and thyme or rosemary (if using). Serve the creamy chicken with your favorite side, such as rice, mashed potatoes, or steamed vegetables.
Notes:
- You can add sautéed spinach, mushrooms, or other veggies to the sauce for extra flavor.
- For a lower-fat version, you can replace the cream cheese with a reduced-fat version and use light cream.
- If you prefer a bit of heat, add red pepper flakes or a dash of hot sauce to the sauce.
- This recipe works well with boneless chicken thighs for a juicier result.
