Cottage Cheese Flatbread 🫓🧀

Ingredients:

  • 1 cup cottage cheese (drained)
  • 1 1/2 cups all-purpose flour (plus extra for rolling)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (plus more for cooking)
  • 1 egg
  • 2 tablespoons fresh herbs (optional, such as parsley or cilantro)
  • 1 teaspoon garlic powder (optional, for extra flavor)

Instructions:

  1. Prepare the dough: In a large mixing bowl, combine the cottage cheese, flour, baking powder, salt, olive oil, and egg. Stir until a dough begins to form. If you’re using garlic powder or fresh herbs, add them to the mixture for extra flavor.
  2. Knead the dough: Lightly flour a clean surface and turn the dough out onto it. Knead the dough for about 3-4 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little more flour, a tablespoon at a time, until you get the right consistency.
  3. Rest the dough: Cover the dough with a kitchen towel or plastic wrap and let it rest for 15-20 minutes. This helps the dough relax and makes it easier to roll out.
  4. Shape the flatbread: Once the dough has rested, divide it into 4 equal portions. Roll each portion into a ball and then roll each ball out into a flat, round shape about 6-8 inches in diameter.
  5. Cook the flatbreads: Heat a non-stick skillet or griddle over medium heat and add a small amount of olive oil. Once hot, cook each flatbread for 2-3 minutes on each side, or until golden brown spots appear and the flatbread puffs slightly. You may need to adjust the heat to prevent burning.
  6. Serve: Once the flatbreads are cooked, serve them warm. These are great on their own, or you can pair them with dips like hummus, yogurt, or tzatziki. They also make a great side to soups and salads.

Tips:

  • Flavor variations: You can add a pinch of cumin, paprika, or za’atar to the dough for extra flavor.
  • Make it cheesy: For a cheesy twist, sprinkle some shredded cheese (like mozzarella or cheddar) on top of the flatbreads just before the end of cooking and cover with a lid to melt.
  • Storage: Store any leftovers in an airtight container at room temperature for up to 2 days, or freeze for up to 3 months. Reheat in a skillet to restore the texture.
