Instructions:
- Prepare the dough: In a large mixing bowl, combine the cottage cheese, flour, baking powder, salt, olive oil, and egg. Stir until a dough begins to form. If you’re using garlic powder or fresh herbs, add them to the mixture for extra flavor.

- Cook the flatbreads: Heat a non-stick skillet or griddle over medium heat and add a small amount of olive oil. Once hot, cook each flatbread for 2-3 minutes on each side, or until golden brown spots appear and the flatbread puffs slightly. You may need to adjust the heat to prevent burning.
- Serve: Once the flatbreads are cooked, serve them warm. These are great on their own, or you can pair them with dips like hummus, yogurt, or tzatziki. They also make a great side to soups and salads.

- Make it cheesy: For a cheesy twist, sprinkle some shredded cheese (like mozzarella or cheddar) on top of the flatbreads just before the end of cooking and cover with a lid to melt.
- Storage: Store any leftovers in an airtight container at room temperature for up to 2 days, or freeze for up to 3 months. Reheat in a skillet to restore the texture.
