- 1 lb ground sausage (mild or spicy, depending on preference)

- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1 can (10 oz) diced tomatoes with green chilies (Rotel works great)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika (optional)
- Salt and pepper, to taste

Instructions:
- Cook the Sausage:
- In a large skillet, cook the ground sausage over medium heat until it’s browned and fully cooked, breaking it up with a spoon as it cooks. Drain any excess grease.
- Combine the Ingredients:
- In the same skillet or a separate medium pot, add the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, sour cream, and the can of diced tomatoes with green chilies (do not drain).
- Stir until the cream cheese has melted and the mixture is smooth and well combined.
- Season the Dip:
- Add the cooked sausage to the cheese mixture. Stir in the garlic powder, onion powder, smoked paprika (if using), salt, and pepper.
- Continue cooking over medium heat, stirring frequently, until everything is heated through and the cheese is melted.
- Serve:
- Serve the dip warm with tortilla chips, crackers, sliced baguette, or vegetable sticks for dipping.

- For Extra Flavor: Add a pinch of cayenne pepper or a few dashes of hot sauce for a spicy kick.
- Make Ahead: You can prepare the dip a day in advance, store it in the refrigerator, and reheat it when ready to serve. Just add a splash of milk if it thickens too much.
