Ingredients:
For the Meatballs:
- 1 lb ground beef (or ground turkey for a leaner option)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
For the Pineapple Barbecue Sauce:
- 1 cup pineapple chunks (fresh or canned, with juice)
- 1 cup barbecue sauce (your favorite brand or homemade)
- 1 tablespoon soy sauce
- 1 tablespoon honey or brown sugar (optional for extra sweetness)
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon crushed red pepper flakes (optional for heat)

Instructions:
- Make the Meatballs:
- In a large bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix well until everything is fully incorporated.
- Form the mixture into small meatballs, about 1-inch in diameter, and set them aside on a tray or plate.
- Prepare the Pineapple Barbecue Sauce:
- In a medium bowl, combine the pineapple chunks (with juice), barbecue sauce, soy sauce, honey (or brown sugar), ground ginger, garlic powder, and red pepper flakes (if using). Stir until the ingredients are fully combined.
- Cook in the Slow Cooker:
- Place the meatballs into the slow cooker. Pour the pineapple barbecue sauce over the meatballs, ensuring they are well coated.
- Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, or until the meatballs are cooked through and tender.
- Serve:
- Once the meatballs are ready, serve them with a drizzle of the pineapple barbecue sauce from the slow cooker.
- These meatballs are perfect on their own, over rice, or served as an appetizer with toothpicks.
Tips:
- Freezing Option: You can freeze the meatballs before cooking. To do so, shape the meatballs, place them on a tray to freeze individually, and then transfer to a freezer bag. When ready to cook, add them to the slow cooker with the sauce and cook as usual.
- Meatball Variation: You can use ground chicken or pork if you prefer a different flavor.
- Sauce Adjustments: If you like a tangier sauce, add a little extra vinegar or lemon juice. For more heat, increase the red pepper flakes or add some chopped jalapeños to the sauce.
- Serving Ideas: Serve with rice, mashed potatoes, or even on sliders as a fun party snack.
