Croissant Breakfast Sandwiches

These Croissant Breakfast Sandwiches are the perfect way to start your day! Flaky, buttery croissants filled with savory scrambled eggs, crispy bacon or sausage, melted cheese, and a touch of creamy sauce. These sandwiches are customizable to suit your taste and are great for busy mornings, brunch, or a breakfast-for-dinner option!


Ingredients:

  • 4 large croissants (fresh or store-bought)
  • 4 large eggs
  • 1/4 cup milk or heavy cream
  • Salt and pepper, to taste
  • 4 slices of cheddar, Swiss, or American cheese (or your favorite cheese)
  • 4 slices cooked bacon or 4 sausage patties (or both)
  • 1 tbsp butter
  • Optional toppings: avocado slices, tomato slices, hot sauce, or mayo

Instructions:

  1. Prep the croissants: Slice the croissants in half horizontally, leaving them hinged if possible (like a sandwich bun). If they’re not pre-baked, warm them in the oven for a few minutes until flaky and golden.
  2. Cook the eggs: In a medium bowl, whisk together the eggs, milk or cream, salt, and pepper. In a non-stick skillet, melt 1 tbsp of butter over medium-low heat. Pour in the egg mixture and cook gently, stirring occasionally, until the eggs are scrambled and just set (about 3-5 minutes). Keep them soft and creamy, not too dry.
  3. Cook the bacon or sausage: While the eggs are cooking, heat the bacon in a separate skillet over medium heat, turning occasionally until crispy (about 5-7 minutes). Alternatively, cook the sausage patties in the same way, then set aside once cooked through.
  4. Assemble the sandwiches: Place the bottom half of each croissant on a plate. Add a slice of cheese on each croissant (the warmth of the croissant will slightly melt the cheese). Top with a generous scoop of scrambled eggs, then add bacon or sausage on top.
  5. Top and serve: Place the other half of the croissant on top to complete the sandwich. If desired, add avocado, tomato slices, hot sauce, or mayo for extra flavor. Serve immediately and enjoy!
