Cool Whip Candy Recipe

Ingredients:

  • 1 8 oz tub of Cool Whip (thawed)
  • 1 1/2 cups powdered sugar
  • 1 1/2 cups shredded coconut (sweetened or unsweetened)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mini chocolate chips (semi-sweet or milk chocolate)
  • 1 cup chopped nuts (optional, like walnuts or pecans)

Instructions:

  1. Prepare the Mixture:
    • In a large mixing bowl, combine the thawed Cool Whip and powdered sugar. Mix until smooth and well combined.
    • Stir in the shredded coconut and vanilla extract until evenly distributed.
  2. Shape the Candies:
    • Use a tablespoon to scoop the mixture and shape it into small balls or mounds with your hands. You can also use a cookie scoop for even portions.
    • Place the formed balls onto a parchment-lined baking sheet or tray.
  3. Chill:
    • Once the candies are shaped, place the baking sheet in the freezer for about 30 minutes to firm up.
  4. Coat with Chocolate:
    • While the Cool Whip candies are chilling, melt the mini chocolate chips. You can do this by placing the chocolate chips in a microwave-safe bowl and heating in 30-second intervals, stirring in between, until fully melted.
    • Dip each candy ball into the melted chocolate, making sure it’s fully coated. Place the dipped candies back onto the parchment-lined sheet.
  5. Add Optional Toppings:
    • If desired, sprinkle chopped nuts on top of the chocolate coating or a pinch of sea salt for a salty-sweet contrast.
  6. Freeze and Serve:
    • Place the chocolate-coated candies back in the freezer to set for another 30 minutes to 1 hour. Once the chocolate is firm, they’re ready to be served.
    • Store the candies in an airtight container in the freezer or refrigerator until ready to enjoy.
  7. Serve:
    • Serve and enjoy these creamy, coconut-filled treats with the perfect chocolate coating!

Tips:

  • Flavors: You can change up the flavor by adding almond extract or orange zest to the Cool Whip mixture for a new twist.
  • Storage: Keep the Cool Whip candies stored in the freezer or fridge for best results. They last for up to a week if kept in an airtight container.
  • Make It Nut-Free: Omit the nuts if you’re making these for someone with allergies or prefer a smooth texture.
