Ingredients:
For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter (softened)
- 1 1/4 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
- 1 cup colorful Christmas sprinkles (or any festive sprinkles of your choice)
For the Frosting:
- 1 cup unsalted butter (softened)
- 4 cups powdered sugar
- 2-3 tbsp whole milk
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional, for extra flavor)
- Green food coloring (for a festive color, optional)
- More sprinkles for decorating (optional)

Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper circles.
2. Make the Cake Batter:
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients. Mix until just combined.
3. Add the Sprinkles:
- Gently fold in the Christmas sprinkles. Be careful not to overmix so that the sprinkles don’t bleed into the batter too much.
4. Bake the Cake:
- Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
5. Make the Frosting:
- In a large bowl, beat the softened butter using an electric mixer until creamy, about 2 minutes.
- Gradually add the powdered sugar, 1 cup at a time, beating well after each addition. Add milk 1 tablespoon at a time until you reach your desired frosting consistency (fluffy but spreadable).
- Stir in the vanilla and almond extracts, and add a few drops of green food coloring if you want a festive green color for the frosting. Mix until well combined.
6. Assemble the Cake:
- Once the cakes are completely cool, spread a layer of frosting on top of the first cake layer. Place the second cake layer on top and frost the top and sides of the entire cake.
- Decorate with extra sprinkles, adding as much or as little as you like!
7. Serve and Enjoy:
- Slice and serve your festive Christmas Funfetti Cake! It’s a great centerpiece for your holiday table or as a fun treat for guests to enjoy.
Tips:
- Make Ahead: You can bake the cake and store the layers in an airtight container for up to 2 days before frosting. Frost the cake just before serving.
- Food Coloring: You can use red, green, or both food coloring in the frosting for extra holiday cheer!
- Sprinkle Tip: For the best results, use nonpareil or jimmies sprinkles to avoid the color bleeding into the batter too much.
