Boat Dip (Rotel Ranch Dip)

Ingredients:

  • 1 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1 packet ranch seasoning mix (typically Hidden Valley or a similar brand)
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, drained
  • 1 cup shredded cheddar cheese (or a cheese blend, optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional, for heat)
  • Fresh cilantro or green onions, chopped (for garnish, optional)

Instructions:

  1. Prepare the Dip Base:
    • In a large mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Use a hand mixer or a whisk to blend until smooth and creamy.
  2. Add Rotel and Spices:
    • Stir in the drained can of Rotel tomatoes and green chilies, garlic powder, onion powder, and cayenne pepper (if using). Mix until everything is evenly incorporated.
  3. Cheese It Up:
    • Fold in the shredded cheddar cheese (or cheese blend) for an extra cheesy flavor. If you want an even creamier dip, you can add more cheese or a little bit of milk to loosen the texture.
  4. Chill (Optional):
    • For best flavor, refrigerate the dip for at least 1 hour before serving to allow the flavors to meld. However, you can also serve immediately if you’re in a hurry!
