These S’mores Bars are the perfect easy, no-bake dessert that brings all the delicious flavors of traditional s’mores into a convenient bar form. With layers of graham crackers, gooey marshmallows, rich chocolate, and a buttery crust, these bars are sure to become a new favorite!
Ingredients:
For the crust:
- 1 1/2 cups graham cracker crumbs (about 12 graham crackers, crushed)
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the filling:
- 2 cups mini marshmallows
- 1 1/2 cups milk chocolate chips (or chopped chocolate)
- 1/2 cup heavy cream
- 1 tsp vanilla extract
For the topping:
- 1/2 cup mini marshmallows (for toasting)
- 1/2 cup milk chocolate chips (for drizzling, optional)

Instructions:
- Prepare the crust:
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.
- Press the graham cracker mixture into the bottom of the prepared baking dish, making sure it’s even and compact.
- Bake for 8 minutes, then remove from the oven and set aside to cool slightly.
- Make the marshmallow-chocolate filling:
- In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Remove from heat and stir in the chocolate chips until smooth and fully melted. Add the vanilla extract and mix well.
- Stir in 2 cups of mini marshmallows and pour the mixture over the cooled graham cracker crust. Spread it evenly across the crust.
- Top and toast:
- Sprinkle 1/2 cup of mini marshmallows evenly over the top of the bars.
- Place the baking dish under your broiler (on high) for 1-2 minutes to toast the marshmallows, keeping a close eye to make sure they don’t burn. You can also use a kitchen torch to toast them evenly.
- Optional: Drizzle the top with extra melted chocolate chips for an extra chocolatey touch.
- Cool and slice:
- Let the bars cool at room temperature for at least 30 minutes. Once cooled, refrigerate them for 1-2 hours to help them set.
- Slice into squares and serve!
Tips:
- For extra flavor: Add a pinch of salt to the chocolate filling to enhance the sweetness of the marshmallows and chocolate.
- Make it festive: You can sprinkle crushed graham crackers on top for added crunch, or drizzle with caramel sauce for a fun twist.
- Storage: Store the s’mores bars in an airtight container at room temperature for up to 3-4 days, or in the fridge for up to a week.
