Ingredients:
- 1 (8 oz) package cream cheese, softened
- 1 cup sour cream
- 1 packet ranch seasoning mix (typically Hidden Valley or a similar brand)
- 1 (10 oz) can Rotel diced tomatoes and green chilies, drained
- 1 cup shredded cheddar cheese (or a cheese blend, optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon cayenne pepper (optional, for heat)
- Fresh cilantro or green onions, chopped (for garnish, optional)

Instructions:
- Prepare the Dip Base:
- In a large mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Use a hand mixer or a whisk to blend until smooth and creamy.
- Add Rotel and Spices:
- Stir in the drained can of Rotel tomatoes and green chilies, garlic powder, onion powder, and cayenne pepper (if using). Mix until everything is evenly incorporated.
- Cheese It Up:
- Fold in the shredded cheddar cheese (or cheese blend) for an extra cheesy flavor. If you want an even creamier dip, you can add more cheese or a little bit of milk to loosen the texture.
- Chill (Optional):
- For best flavor, refrigerate the dip for at least 1 hour before serving to allow the flavors to meld. However, you can also serve immediately if you’re in a hurry!
- Serve:
- Garnish with fresh cilantro or chopped green onions for an extra pop of freshness. Serve with tortilla chips, crackers, or fresh veggies for dipping!
Tips:
- Cheese Options: You can experiment with different cheese blends like Monterey Jack, pepper jack (for some heat), or mozzarella if you prefer a milder flavor.
- Heat Adjustment: If you like it spicier, keep the juices from the Rotel tomatoes, or add a diced jalapeño for extra kick.
- Creamier Dip: To make the dip even creamier, add a couple of tablespoons of mayonnaise or a little milk to thin out the consistency.
