Sweet Alabama Pecan Bread

Ingredients

  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups chopped pecans

Instructions

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Mix the Batter:
    • In a large bowl, whisk together granulated sugar, brown sugar, flour, baking powder, and salt.
    • In a separate bowl, mix vegetable oil, eggs, and vanilla extract until well combined. Add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped pecans.
  3. Bake the Bread:
    • Pour the batter into the prepared baking dish and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  4. Cool and Serve:
    • Allow the bread to cool completely before slicing into squares. Serve as is or with a dusting of powdered sugar for extra sweetness.
