Sugar Cookie Truffles

These Sugar Cookie Truffles are a no-bake treat made with crushed sugar cookies and a creamy vanilla coating. Perfect for holidays, gifting, or satisfying a sweet craving, they’re as easy to make as they are delightful to eat.

Ingredients

Truffle Base:

  • 2 cups crushed sugar cookies (store-bought or homemade)
  • 4 oz cream cheese, softened
  • ½ tsp vanilla extract

Coating:

  • 12 oz white chocolate chips or candy melts
  • 1 tbsp coconut oil or shortening (optional, for smoother coating)

Optional Toppings:

  • Sprinkles, colored sugar, or crushed cookies

Instructions

  1. Crush the Cookies:
    • Place sugar cookies in a food processor and pulse until fine crumbs form. Alternatively, place them in a zip-top bag and crush with a rolling pin.
  2. Make the Truffle Dough:
    • In a medium bowl, mix the crushed cookies, cream cheese, and vanilla extract until a soft, sticky dough forms.
  3. Shape the Truffles:
    • Scoop tablespoon-sized portions of the dough and roll into balls. Place them on a parchment-lined baking sheet and freeze for 20–30 minutes, or until firm.
  4. Melt the Coating:
    • In a microwave-safe bowl, melt the white chocolate chips and coconut oil (if using) in 20-second intervals, stirring after each, until smooth.
  5. Dip the Truffles:
    • Using a fork or candy dipping tool, dip each truffle into the melted white chocolate, ensuring it’s fully coated. Let the excess drip off before placing it back on the parchment-lined sheet.
  6. Decorate:
    • While the coating is still wet, top the truffles with sprinkles, colored sugar, or crushed cookies.
  7. Chill and Set:
    • Refrigerate the truffles for at least 30 minutes, or until the coating is firm.
  8. Serve and Enjoy:
    • Serve chilled or at room temperature.
