These Butter Pecan Cookies are rich, buttery, and loaded with toasted pecans for the ultimate indulgence. Soft and chewy with a perfect nutty crunch, they’re the ideal treat for any occasion, from holiday cookie trays to everyday cravings.

Ingredients

  • ¾ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup chopped pecans, toasted

Instructions

  1. Toast the Pecans:
    • Preheat your oven to 350°F (175°C). Spread the chopped pecans on a baking sheet and toast for 5–7 minutes, or until fragrant. Set aside to cool.
  2. Prepare the Dough:
    • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
    • Add the egg and vanilla extract, mixing until well combined.
    • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the toasted pecans.
  3. Chill the Dough:
    • Cover the dough and refrigerate for at least 1 hour. This helps prevent spreading during baking and enhances the flavor.
  4. Bake the Cookies:
    • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
    • Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake for 10–12 minutes, or until the edges are lightly golden but the centers are still soft.
  5. Cool and Serve:
    • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack. Serve warm or store for later!

Tips and Tricks

  • Extra Buttery Flavor: Brown the butter before creaming for a richer, nuttier flavor. Let it cool before mixing.
  • Thicker Cookies: For thicker cookies, shape the dough into balls and freeze for 10 minutes before baking.
  • Storage: Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
  • Add Chocolate: Mix in ½ cup of white or dark chocolate chips for an extra indulgent twist.
