Ingredients (Makes about 12 deviled eggs — 24 halves)

  • 12 large eggs
  • ⅓ cup mayonnaise
  • 1 tablespoon sour cream

  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, roasted or finely minced
  • 1 teaspoon apple cider vinegar
  • Salt and black pepper, to taste
  • 1 tablespoon fresh chives or green onions, chopped (for garnish)
  • Chili flakes or smoked paprika (for garnish)

Instructions

1. Hard boil the eggs

  • Place eggs in a single layer in a pot and cover with cold water by 1 inch.
  • Bring to a boil over medium-high heat.
  • Once boiling, cover pot, remove from heat, and let sit for 10–12 minutes.
  • Drain and transfer eggs to an ice bath to cool completely.

2. Prepare the filling

  • Peel cooled eggs and slice in half lengthwise.
  • Carefully remove yolks and place in a bowl.
  • Mash yolks with mayonnaise, sour cream, chili garlic sauce, Dijon mustard, roasted garlic, vinegar, salt, and pepper until smooth.

3. Fill the eggs

  • Spoon or pipe the yolk mixture back into the egg whites.

4. Garnish and serve

  • Sprinkle with chopped chives and a pinch of chili flakes or smoked paprika for an extra kick and color.
