Ingredients:
- 2 lbs baby potatoes (or small potatoes)
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1/2 tsp smoked paprika (optional)
- Salt and black pepper, to taste
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley (optional, for garnish)
- 3 cloves garlic, minced
- 1 tbsp fresh thyme or rosemary (optional)

Instructions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the potatoes: Wash and scrub the potatoes clean. Cut them into halves or quarters, making sure they’re roughly the same size for even cooking.
- Season the potatoes: In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, oregano, smoked paprika (optional), salt, and pepper until evenly coated.
