Crispy Garlic Parmesan Crusted Potatoes

These crispy, golden-brown potatoes with a garlic Parmesan crust are absolutely irresistible! Packed with flavor and an ultra-crunchy exterior, these potatoes make the perfect side dish for any meal and are sure to be a hit with your family and friends.


Ingredients:

  • 2 lbs baby potatoes (or small potatoes)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley (optional, for garnish)
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme or rosemary (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the potatoes: Wash and scrub the potatoes clean. Cut them into halves or quarters, making sure they’re roughly the same size for even cooking.
  3. Season the potatoes: In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, oregano, smoked paprika (optional), salt, and pepper until evenly coated.
  4. Add garlic and Parmesan: Sprinkle the minced garlic and grated Parmesan cheese over the potatoes, and toss again to ensure the potatoes are evenly coated in the cheesy garlic mixture.
  5. Arrange on baking sheet: Spread the potatoes in a single layer on the prepared baking sheet. Make sure they’re spaced out to allow for crisping.
  6. Bake for 30-40 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside, and soft on the inside.
  7. Garnish and serve: Remove from the oven and sprinkle with fresh parsley (and extra Parmesan if desired). Serve immediately and enjoy!

Tips:

  • For extra crispiness, try sprinkling a little cornstarch on the potatoes before coating them with the seasoning.
