- For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs (preferably Italian-style)
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese

- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup marinara sauce (store-bought or homemade)

- 4 sub rolls or hoagie buns
- Fresh basil or parsley for garnish (optional)

Instructions:
- Prepare the Chicken:
- Preheat your oven to 375°F (190°C).
- Set up a breading station: in one shallow bowl, place the flour; in another, beat the eggs; and in a third, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
- Dip each chicken breast into the flour, followed by the egg, and then coat it thoroughly in the breadcrumb mixture. Press gently to make sure the coating sticks well.
- Fry the Chicken:
- Heat about 1-2 tablespoons of olive oil in a large skillet over medium heat.
- Fry the chicken breasts for 3-4 minutes on each side, or until golden brown and cooked through (about 165°F internal temperature).
- Once cooked, place the chicken on a paper towel-lined plate to absorb any excess oil.
- Assemble the Chicken Parmesan Sub:
- Place the fried chicken breasts on a baking sheet. Spoon marinara sauce generously over each piece of chicken. Top each with a good amount of shredded mozzarella cheese.
- Bake in the oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Assemble the Subs:
- While the chicken is baking, slice the sub rolls horizontally but not all the way through (leave a hinge).
- Once the chicken is done, place one chicken breast inside each roll.
- Garnish with fresh basil or parsley if desired. Drizzle more marinara sauce if you like it extra saucy.
