Chicken and Dressing Casserole

Ingredients:

  • 3 cups cooked chicken, shredded
  • 1 package (6 oz) cornbread stuffing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1/2 cup unsalted butter, melted
  • 1/2 cup diced onion (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Spread the shredded chicken evenly in the bottom of the dish.
  3. In a medium bowl, mix the stuffing mix, chicken broth, melted butter, and diced onion (if using) until fully combined. Let the mixture sit for 5 minutes to absorb the liquid.
  4. In a separate bowl, whisk together the cream of chicken soup with 1/2 cup of water or milk. Pour this mixture evenly over the chicken.
  5. Spread the prepared stuffing mixture over the top.
