Chicken Parmesan Sub

Ingredients:

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • 1 cup all-purpose flour
    • 2 large eggs, beaten
    • 2 cups breadcrumbs (preferably Italian-style)
    • 1 cup grated Parmesan cheese
    • 2 cups shredded mozzarella cheese
    • 1 teaspoon garlic powder
    • 1 teaspoon dried oregano
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ½ cup marinara sauce (store-bought or homemade)
    • Olive oil for frying
  • For the Subs:
    • 4 sub rolls or hoagie buns
    • Fresh basil or parsley for garnish (optional)
    • Extra marinara sauce for drizzling

Instructions:

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Set up a breading station: in one shallow bowl, place the flour; in another, beat the eggs; and in a third, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
    • Dip each chicken breast into the flour, followed by the egg, and then coat it thoroughly in the breadcrumb mixture. Press gently to make sure the coating sticks well.
  2. Fry the Chicken:
    • Heat about 1-2 tablespoons of olive oil in a large skillet over medium heat.
    • Fry the chicken breasts for 3-4 minutes on each side, or until golden brown and cooked through (about 165°F internal temperature).
    • Once cooked, place the chicken on a paper towel-lined plate to absorb any excess oil.
  3. Assemble the Chicken Parmesan Sub:
    • Place the fried chicken breasts on a baking sheet. Spoon marinara sauce generously over each piece of chicken. Top each with a good amount of shredded mozzarella cheese.
    • Bake in the oven for 10-12 minutes, or until the cheese is melted and bubbly.
  4. Assemble the Subs:
    • While the chicken is baking, slice the sub rolls horizontally but not all the way through (leave a hinge).
    • Once the chicken is done, place one chicken breast inside each roll.
    • Garnish with fresh basil or parsley if desired. Drizzle more marinara sauce if you like it extra saucy.
  5. Serve:

Tips:

  • Chicken Thickness: If your chicken breasts are too thick, you can slice them in half horizontally to make them thinner for quicker cooking and even crispiness.
