Banana Bread Brownies 🍌🍫

Ingredients:

For the banana bread layer:

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup sour cream or plain yogurt (for extra moisture)

For the brownie layer:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional, for extra richness)

Instructions:

Prepare the banana bread layer:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. Mix wet ingredients: In a large bowl, combine the mashed bananas, melted butter, sugar, eggs, and vanilla extract. Mix until smooth.
  3. Add dry ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually fold the dry ingredients into the wet ingredients until just combined. Stir in the sour cream or yogurt for added moisture.
  4. Pour into pan: Pour the banana bread batter into the prepared baking pan, spreading it evenly.

Prepare the brownie layer:

  1. Mix brownie batter: In a separate bowl, combine the melted butter, sugar, eggs, and vanilla extract. Stir in the cocoa powder, flour, and salt until just combined. If using, fold in the chocolate chips for extra chocolatey goodness.
  2. Layer over banana bread: Gently spoon the brownie batter over the banana bread batter in the pan. Use a spatula to smooth it into an even layer.

Bake the brownies:

  1. Bake: Bake for 35-40 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter).
  2. Cool: Let the brownies cool in the pan for 10-15 minutes, then transfer them to a wire rack to cool completely.

Serve:

  1. Slice and enjoy: Once cooled, slice the brownies into squares and enjoy the perfect blend of banana bread and brownies in every bite!

Tips:

  • Banana ripeness: The riper the bananas, the sweeter and more flavorful the banana bread layer will be. Overripe bananas are perfect for this recipe!
  • For extra flavor: Add chopped walnuts or chocolate chunks to the banana bread layer for added texture.
  • Storage: These banana bread brownies can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to 5 days.
  • Freezing: You can freeze individual brownies for up to 3 months. Just wrap them tightly in plastic wrap and store in a freezer-safe container.
