No-Bake Grasshopper Pie 🍫🍃

Ingredients:

For the crust:

  • 1 1/2 cups chocolate cookie crumbs (Oreos or chocolate graham crackers)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 1/2 cups heavy whipping cream, chilled
  • 1/2 cup mint chocolate chips (or peppermint extract for a non-chocolate mint flavor)
  • 1/4 cup crème de menthe (for flavor) or peppermint extract (for alcohol-free option)
  • 1/4 cup chocolate syrup (for drizzling)

Instructions:

Prepare the crust:

  1. Mix the crust ingredients: In a medium bowl, combine the chocolate cookie crumbs, granulated sugar, and melted butter. Stir until everything is well coated.
  2. Press into the pan: Press the mixture firmly into the bottom of a 9-inch pie dish to form the crust. Place the crust in the fridge for 10-15 minutes to set.

Prepare the filling:

  1. Whip the cream: In a large bowl, beat the chilled heavy whipping cream with an electric mixer until stiff peaks form. Set aside.
  2. Make the filling: In another bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Stir in the mint chocolate chips or peppermint extract and crème de menthe (or peppermint extract) until well combined.
  3. Fold in the whipped cream: Gently fold the whipped cream into the cream cheese mixture, taking care to keep it light and fluffy.

Assemble the pie:

  1. Fill the crust: Spoon the mint cream mixture into the chilled chocolate cookie crust and spread it out evenly.
  2. Chill the pie: Cover the pie and refrigerate for at least 4 hours, or overnight, for the filling to set and firm up.

Serve:

  1. Garnish and serve: Just before serving, drizzle the top of the pie with chocolate syrup for an extra treat. Slice and enjoy the creamy, minty goodness!

Tips:

  • Crust alternatives: You can use chocolate graham cracker crumbs or even crushed chocolate wafer cookies if you prefer a different crust flavor.
  • Alcohol-free option: If you don’t want to use crème de menthe, you can use peppermint extract instead for a non-alcoholic version.
  • Mint flavor: Adjust the amount of peppermint extract or crème de menthe to your taste. Add a little more if you like a stronger mint flavor.
  • Make ahead: This pie can be made up to 2 days ahead. The longer it chills, the better the flavors meld.
