Ingredients:

  • 2 boneless, skinless chicken breasts

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 cup cooked white or brown rice
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 tablespoon butter
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled cotija cheese (or feta)
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional, for extra flavor)
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Cook the chicken: Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt, pepper, chili powder, cumin, and paprika. Cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and let it rest for a few minutes before slicing into strips.
