Instructions:
- Prepare the chicken: Preheat your oven to 375°F (190°C). Season the chicken breasts with a little salt and pepper.
- Coat the chicken: Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, beat the eggs. In the third dish, mix the breadcrumbs, 1/2 cup Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.
- Bread the chicken: Dredge each chicken breast in the flour, coating it completely. Then dip it into the egg mixture, followed by the breadcrumb mixture, pressing gently to make sure the coating sticks well.
- Fry the chicken: Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the chicken breasts and fry for about 4-5 minutes per side, until golden brown and crispy. Transfer the chicken to a paper towel-lined plate to drain any excess oil.
- Assemble the dish: Place the fried chicken breasts on a baking sheet. Spoon about 2-3 tablespoons of marinara sauce over each chicken breast, then top with shredded mozzarella cheese and a sprinkle of grated Parmesan cheese.
- Bake: Bake the chicken in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (75°C).
- Serve: Garnish with fresh basil or parsley before serving. Serve with your favorite sides, like pasta, salad, or garlic bread.
Notes:
- For extra crispiness, you can double-dip the chicken (flour, egg, breadcrumb mixture) before frying.
- If you prefer to make this a lighter version, you can bake the breaded chicken instead of frying it.
- If you don’t have marinara sauce on hand, you can use a simple tomato sauce and add some dried Italian herbs for flavor.
