One-Pan Chicken with Buttered Noodles

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 8 oz egg noodles (or your favorite type of pasta)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the chicken: Season the chicken breasts with salt, pepper, garlic powder, and oregano.
  2. Cook the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Prepare the noodles: In the same skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 2 minutes until soft. Add minced garlic and cook for another minute until fragrant.
  4. Cook the noodles: Add the chicken broth to the skillet and bring to a simmer. Add the egg noodles and cook, stirring occasionally, for about 8-10 minutes until the noodles are tender and most of the liquid is absorbed.
  5. Make the buttered noodles: Once the noodles are cooked, reduce the heat and stir in the remaining butter and heavy cream. Add the Parmesan cheese and mix until everything is well combined and creamy.
  6. Combine the chicken and noodles: Return the chicken breasts to the skillet, nestling them into the noodles. Let everything cook together for an additional 2-3 minutes to reheat the chicken.
  7. Serve: Garnish with fresh parsley and serve immediately.

Notes:

  • For extra flavor, you can add a squeeze of lemon juice or a sprinkle of red pepper flakes to the finished dish.
  • If you prefer a thicker sauce, let the noodles simmer longer before adding the cream and cheese.
  • Feel free to use any pasta you have on hand, such as penne or fettuccine.
