Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 clove garlic, minced
- 1/2 cup Boursin cheese with garlic and fine herbs
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- Salt and pepper, to taste

Instructions:
- Prepare the chicken: Season both sides of the chicken breasts with salt and pepper.
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- Make the sauce: In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add Boursin and liquids: Stir in the Boursin cheese, heavy cream, and chicken broth. Stir continuously until the sauce is smooth and the cheese has melted.
- Combine chicken with sauce: Return the cooked chicken breasts to the skillet, spooning some sauce over the top. Let it simmer for about 3-4 minutes to allow the flavors to meld.
- Serve: Garnish with fresh parsley or thyme and serve immediately with your favorite sides.
Notes:
- You can substitute chicken thighs for breasts if you prefer a juicier cut of meat.
- If you want a thicker sauce, simmer it longer before adding the chicken back in.
- For extra flavor, add a splash of white wine or a squeeze of lemon juice to the sauce.
