Ingredients:
- 4 medium potatoes (peeled and cubed)
- 3 tablespoons butter
- 1/4 cup milk (or heavy cream for extra creaminess)
- 1/2 cup grated Parmesan cheese
- 2 teaspoons garlic powder (or 2 cloves garlic, minced)
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese (optional for extra cheesy flavor)
- 1/4 cup breadcrumbs (optional, for topping)
- Fresh parsley (chopped, for garnish)

Instructions:
- Cook the potatoes: Place the cubed potatoes in a pot and cover with water. Bring to a boil and cook for 10-12 minutes, or until fork-tender. Drain the potatoes and return them to the pot.
- Mash the potatoes: Add the butter, milk, garlic powder (or minced garlic), salt, and pepper to the potatoes. Mash until smooth and creamy. Stir in the grated Parmesan cheese and shredded mozzarella cheese (if using) until melted and combined.
- Prepare the muffin tin: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter to prevent sticking.
- Assemble the potato cups: Spoon the mashed potatoes into each muffin cup, packing them down slightly. Use the back of a spoon to create a small indentation in the center of each potato cup.
- Top and bake: If desired, sprinkle breadcrumbs over the top of each potato cup for added crunch. Place the muffin tin in the oven and bake for 15-20 minutes, or until the tops are golden brown and crispy.
- Serve: Once baked, remove the potato cups from the muffin tin and transfer to a serving plate. Garnish with fresh chopped parsley and serve immediately.
Notes:
- For extra flavor, you can add crispy bacon bits or chives to the mashed potatoes before baking.
- If you prefer a lighter version, use skim milk or Greek yogurt instead of cream or heavy cream.
- These mashed potato cups can be made ahead of time and stored in the refrigerator. Simply reheat in the oven for about 10 minutes before serving.
