Irresistible S’mores Cookies Recipe

These Irresistible S’mores Cookies combine all the classic flavors of a s’more—chocolate, graham crackers, and gooey marshmallows—into one easy-to-make cookie. Perfect for any time of year, they’re chewy, gooey, and full of flavor, making them a favorite treat for the whole family!


Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini marshmallows (or chopped large marshmallows)
  • 1/2 cup graham cracker crumbs (about 4-5 graham crackers crushed)
  • 1/4 cup chopped milk chocolate or chocolate bars (optional, for extra chocolatey goodness)
  • Extra mini marshmallows for topping (optional)

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Cream the butter and sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla: Beat in the egg and vanilla extract until combined.
  5. Combine with dry ingredients: Gradually add the dry ingredients to the butter mixture and mix until just combined.
  6. Mix in the s’mores ingredients: Stir in the graham cracker crumbs, mini chocolate chips, mini marshmallows, and chopped chocolate (if using) until evenly distributed throughout the dough.
  7. Form the cookie dough: Use a tablespoon or cookie scoop to portion the dough into balls and place them on the prepared baking sheets. Space the dough balls about 2 inches apart. Gently flatten each cookie with the back of a spoon or your fingers.
  8. Bake the cookies: Bake for 8-10 minutes, or until the edges are golden brown but the centers are still soft. Remove from the oven and immediately press a few extra mini marshmallows on top of each cookie for that gooey, s’mores effect.
