Ingredients

For the Sauce:

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth

For the Chow Mein:

  • 8 oz chow mein noodles (or thin spaghetti)
  • 2 tbsp vegetable oil
  • 1 lb chicken breast, thinly sliced
  • 1 small onion, sliced
  • 1 cup shredded cabbage
  • 1 cup julienned carrots
  • 1/2 cup bean sprouts
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the Noodles: Boil the chow mein noodles according to package instructions. Drain, rinse with cold water, and set aside.
  2. Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, and chicken broth. Set aside.
  3. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until fully cooked, about 5-6 minutes. Remove and set aside.
  4. Cook the Vegetables: Add the remaining oil to the skillet. Stir-fry the onion, cabbage, carrots, and garlic for 3-4 minutes, or until the vegetables are tender but still crisp. Add the bean sprouts and cook for 1 minute.
  5. Combine: Return the chicken to the skillet and add the cooked noodles. Pour the prepared sauce over the top. Toss everything together over medium heat until the sauce thickens and coats the noodles.
  6. Serve: Garnish with green onions and serve hot.
