Crack chicken soup is a creamy, cheesy, and bacon-filled dish that’s packed with flavor! Loaded with tender shredded chicken, ranch seasoning, and hearty vegetables, this comforting soup is perfect for chilly nights or a quick family dinner.

Ingredients

  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 (8 oz) block cream cheese, softened and cubed
  • 1 cup heavy cream
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 1 cup frozen peas and carrots
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion and garlic, cooking until softened and fragrant, about 3 minutes.
  2. Add Broth and Chicken: Pour in the chicken broth and stir in the shredded chicken. Bring to a gentle simmer.
  3. Add Cream Cheese: Stir in the cream cheese until melted and smooth.
  4. Finish with Cream and Cheese: Stir in the heavy cream, ranch seasoning, shredded cheddar cheese, and black pepper. Continue to simmer gently until the cheese is fully melted and the soup is creamy.
  5. Add Bacon and Vegetables: Stir in the crumbled bacon, frozen peas and carrots, and adjust the salt to taste. Simmer for 5 minutes, or until the vegetables are tender.
  6. Serve: Ladle into bowls and garnish with extra cheese, bacon bits, or chopped green onions if desired.

Tips for the Best Crack Chicken Soup

  • Shred Rotisserie Chicken: For a quick shortcut, use pre-cooked rotisserie chicken.

  • Add Heat: Stir in red pepper flakes or a dash of hot sauce for a spicy twist.
  • Serve with Bread: Pair with crusty bread or rolls to soak up the creamy soup.
