They are easy to make, beautifully layered, and full of flavor!

Ingredients:

For the Cheesecake Filling:

  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream

For the Strawberry Crunch Coating:

  • 1 cup graham cracker crumbs
  • 1 cup freeze-dried strawberries (blended into powder)
  • 1/4 cup sugar
  • 1/4 cup unsalted butter (melted)

For the Cones:

  • 6-8 waffle cones (mini or regular size, depending on your preference)

For Garnish:

  • Fresh strawberries (optional, for topping)
  • Extra strawberry crunch coating (for sprinkling)
  • Chocolate drizzle (optional)

Instructions:

  1. Make the Strawberry Crunch Coating:
    • In a food processor or blender, pulse the freeze-dried strawberries into a powder. Combine the strawberry powder with the graham cracker crumbs and sugar in a medium bowl.
    • Stir in the melted butter until the mixture is well combined and the crumbs are evenly coated.
  2. Prepare the Cheesecake Filling:
    • In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
    • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, creating a light and fluffy cheesecake filling.
  3. Prepare the Waffle Cones:
    • Carefully dip the top of each waffle cone into the cheesecake filling, using a spoon to coat the top with the creamy mixture.
    • After dipping the cones into the cheesecake filling, roll the coated part in the strawberry crunch mixture, pressing lightly to ensure it sticks. Repeat with all cones.
  4. Chill:
    • Place the coated cones in the refrigerator for at least 30 minutes to set the cheesecake filling and let the crunch coating firm up.
  5. Garnish and Serve:
    • Once chilled, garnish with fresh strawberries on top of each cone, an extra sprinkle of strawberry crunch coating, and a drizzle of chocolate sauce if desired.
    • Serve immediately or keep in the fridge until ready to enjoy!

Tips:

  • Freeze-dried strawberries: These can be found at most grocery stores in the snack aisle or online. They’re essential for that crunchy, fruity flavor. If you can’t find them, you can substitute with crushed graham crackers, but the strawberry flavor won’t be as strong.
  • Customize the flavor: Swap the strawberry crunch coating for crushed Oreos, chocolate crumbs, or any other flavor you love to create your own variation of these cheesecake cones.
  • Make ahead: These cones can be made a day in advance. Just store them in the fridge until ready to serve!
  • Serving size: If you’re serving these at a party, you can make mini cones using smaller waffle cones, which are a perfect bite-sized treat.
