Ingredients:
For the Meatballs:
- 1 lb ground beef (or a blend of beef and pork)
- 1 cup fresh spinach, chopped
- 3 cloves garlic, minced
- 1/4 cup breadcrumbs (use gluten-free breadcrumbs if preferred)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper, to taste
- 1/2 teaspoon onion powder (optional)
For the Stuffing:
- 4 oz mozzarella cheese, cut into small cubes (or shredded cheese of choice)
For Cooking:
- Olive oil (for frying or baking)

Instructions:
- Preheat oven to 375°F (190°C) if baking.
- Make the Meatballs:
- In a large bowl, combine ground meat, chopped spinach, garlic, breadcrumbs, Parmesan, egg, oregano, basil, onion powder, salt, and pepper. Mix everything well until evenly incorporated.
- Take about 1-2 tablespoons of the meat mixture, flatten it in your palm, and place a cube of mozzarella cheese in the center. Mold the meat around the cheese, sealing it inside, and form it into a ball. Repeat with the remaining mixture.
- Cook the Meatballs:
- Option 1: Pan-fry – Heat a bit of olive oil in a large skillet over medium heat. Cook meatballs in batches, turning occasionally, until browned and cooked through (about 8-10 minutes).
- Option 2: Bake – Place meatballs on a greased or parchment-lined baking sheet. Bake for 20-25 minutes, or until the meatballs are cooked through and browned.
- Serve: Once cooked, remove the meatballs from heat and let them rest for a few minutes before serving.
Tips:
- Make Ahead: You can prepare the meatballs in advance and refrigerate them for up to 24 hours before cooking.
- Stuffing Variations: Feel free to experiment with different cheeses like cheddar or ricotta for a new twist on the filling.
- For a Healthier Version: You can use ground turkey or chicken instead of beef.
- Freezing: These meatballs freeze well. Just cook them, let them cool, and freeze in an airtight container for up to 3 months.
