Ingredients:
For the Sandwiches:
- 1 ½ pounds beef chuck roast (or pre-sliced roast beef for convenience)
- 1 onion, thinly sliced
- 1 tablespoon olive oil
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme (optional)
- Salt and pepper, to taste
- 4 hoagie rolls (or French baguette rolls)
- 4 slices provolone cheese (or Swiss cheese, if preferred)
- Optional: 1 tablespoon butter (for toasting rolls)
For the Au Jus (Dip):
- 2 cups beef broth
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 clove garlic, minced
- 1 teaspoon onion powder
- ½ teaspoon black pepper

Instructions:
- Prepare the Beef:
- If using a whole chuck roast, season the beef with salt, pepper, and garlic powder on all sides.
- Heat olive oil in a large skillet over medium-high heat. Once hot, sear the beef on all sides until browned (about 2-3 minutes per side). If using pre-sliced roast beef, you can skip this step.
- Cook the Beef in the Slow Cooker (or Stovetop):
- Slow Cooker Method: Transfer the seared beef (or raw pre-sliced roast beef) into the slow cooker. Add the sliced onions, beef broth, Worcestershire sauce, thyme, and garlic powder. Cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and easily shreds with a fork.
- Stovetop Method: If you’re in a rush, you can cook the beef on the stovetop. Add the beef to a large pot with the onions, beef broth, Worcestershire sauce, garlic powder, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for about 1-2 hours, stirring occasionally, until the beef is tender.
- Make the Au Jus (Dip):
- In a small saucepan, combine the beef broth, soy sauce, Worcestershire sauce, garlic, onion powder, and black pepper. Simmer over medium-low heat for 5-10 minutes to allow the flavors to meld. Adjust seasoning to taste.
- Assemble the Sandwiches:
- Toasting the Rolls (Optional): If you like your rolls crispy, lightly butter the inside of the hoagie rolls and toast them in a skillet or under the broiler until golden brown.
- Add the Beef: Shred the beef using two forks, then load the hoagie rolls with the shredded beef and some of the onions from the slow cooker or stovetop.
- Melt the Cheese: Place a slice of provolone cheese on top of each sandwich and toast briefly to melt the cheese, either in the oven or under the broiler.
- Serve with Au Jus:
- Serve the sandwiches with the warm au jus on the side for dipping. You can also drizzle a bit of the au jus directly over the beef before serving.
- Enjoy!
Dip each sandwich into the au jus for an extra flavorful, savory bite.
Tips:
- Slow Cooker Convenience: The slow cooker method is great for busy days. Just prep everything in the morning and let it cook while you go about your day.
- Cheese Variations: You can swap provolone for Swiss cheese or even a sharp cheddar for a different flavor.
- Make It Spicy: Add a few dashes of hot sauce or crushed red pepper flakes to the au jus for some heat.
- Beef Cuts: If you prefer, you can use pre-sliced roast beef from the deli for a quicker version of the sandwich. Just heat it in the beef broth mixture to get that authentic French Dip flavor.
