  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Toppings:

  • 6 slices bacon, cooked and crumbled
  • 1 cup mushrooms, sliced
  • 2 tbsp unsalted butter
  • 1 1/2 cups shredded cheddar and Monterey Jack cheese blend

For the Honey Mustard Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tsp lemon juice

Instructions

  1. Prepare the Honey Mustard Sauce:
    • In a small bowl, whisk together mayonnaise, Dijon mustard, honey, and lemon juice. Cover and refrigerate while preparing the chicken.
  2. Cook the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Heat olive oil in a large skillet over medium heat. Sear the chicken for 4-5 minutes per side, or until golden brown and almost cooked through. Remove from the skillet and set aside.

    • In the same skillet, melt the butter over medium heat. Add the mushrooms and sauté for 3-4 minutes, or until softened.
  4. Assemble the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Place the seared chicken breasts in a baking dish. Spread 1-2 tablespoons of honey mustard sauce on each chicken breast.
    • Top with crumbled bacon, sautéed mushrooms, and shredded cheese.
  5. Bake:
    • Bake in the preheated oven for 10-15 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C) and the cheese is melted and bubbly.
  6. Serve:
    • Drizzle with additional honey mustard sauce if desired. Serve hot with sides like mashed potatoes, steamed vegetables, or a fresh salad.
