Crispy Leaf Potatoes

Ingredients:

  • 4 medium-sized potatoes
  • 2 tablespoons olive oil (or melted butter)
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme or rosemary (optional)
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the oven:
    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Prepare the potatoes:
    Wash and peel the potatoes. Slice them into thin rounds (about 1-2 mm thick). You can use a mandoline slicer for uniform slices, which will help achieve that perfect crispy texture.
  3. Soak the slices:
    To remove excess starch and ensure crispiness, soak the potato slices in water for about 15-20 minutes. Drain and pat them dry with a paper towel.
  4. Season the potatoes:
    In a large bowl, toss the potato slices with olive oil (or melted butter), garlic powder, paprika, thyme/rosemary, salt, and pepper. Make sure each slice is evenly coated with the seasoning.
  5. Arrange on a baking sheet:
    Lay the potato slices flat on the baking sheet in a single layer. Make sure they aren’t overlapping too much; this will help them crisp up evenly.
  6. Bake:
    Bake for 25-30 minutes, flipping the slices halfway through. Keep an eye on them to ensure they don’t burn—adjust the time depending on how crispy you want them.
  7. Serve:
    Once crispy and golden brown, remove from the oven. Garnish with fresh parsley (optional) and serve immediately!

  • Thin Slices are Key: For the crispiest results, ensure your potato slices are uniform in thickness. A mandoline slicer is the best tool for this.
  • Use Starchy Potatoes: Russet potatoes are the best option for crispy textures due to their high starch content.
  • Don’t Overcrowd the Pan: Spacing the slices out ensures even baking and crisping. If needed, bake in batches.
  • Seasoning Variations: Feel free to experiment with different seasonings, like parmesan cheese, chili powder, or even a bit of truffle oil for added flavor.

Notes:

  • You can make these crispy leaf potatoes in an air fryer as well. Just arrange the slices in a single layer in the air fryer basket, and cook at 375°F (190°C) for about 15-20 minutes, flipping halfway through.
  • If you prefer extra crispiness, try adding a light dusting of cornstarch or rice flour on the potato slices before seasoning.
  • These potatoes are best enjoyed fresh, but you can store leftovers in an airtight container for a day or two and reheat them in the oven to retain their crispiness.
