Roasted Garlic Butter Parmesan Potatoes 🧄🧈🧀

Ingredients:

  • 1 1/2 pounds baby potatoes (or your preferred variety, halved or quartered)
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: Lemon wedges (for serving)

Instructions:

Prepare the potatoes:

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Prep the potatoes: Wash and halve or quarter the baby potatoes (depending on their size), making sure they’re all roughly the same size for even cooking.

Make the garlic butter mixture:

  1. Combine the ingredients: In a small bowl, whisk together the melted butter, olive oil, minced garlic, oregano, thyme, salt, and pepper until everything is well combined.

Roast the potatoes:

  1. Coat the potatoes: Place the cut potatoes on the prepared baking sheet and pour the garlic butter mixture over them. Toss the potatoes until they’re evenly coated in the garlic butter.
  2. Roast: Arrange the potatoes in a single layer and roast in the preheated oven for 25-30 minutes, or until they’re golden brown and crispy on the outside, and tender on the inside. Halfway through roasting, flip the potatoes to ensure even browning.

Add Parmesan and garnish:

  1. Sprinkle Parmesan: Once the potatoes are done roasting, remove them from the oven and immediately sprinkle with grated Parmesan cheese. Toss gently to coat.
  2. Garnish: Sprinkle chopped fresh parsley over the potatoes for a burst of color and fresh flavor.

Serve:

  1. Enjoy: Serve the roasted garlic butter Parmesan potatoes hot, and optionally add a squeeze of fresh lemon juice for a touch of brightness. They’re perfect as a side dish for any meal!

Tips:

  • Customize the herbs: Feel free to use fresh herbs like thyme or rosemary for added flavor. Fresh garlic can also be used instead of minced garlic.
  • For extra crispiness: For even crispier potatoes, try roasting them cut side down for part of the cooking time.
  • Serving suggestion: These potatoes are great with grilled meats, roast chicken, or as a standalone appetizer with a dipping sauce on the side.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
