Eggnog Truffles

These Eggnog Truffles are the perfect holiday treat! With a creamy, spiced eggnog filling wrapped in rich chocolate, these truffles capture all the flavors of the season in bite-sized form. They’re simple to make and perfect for gifting, holiday parties, or as a cozy indulgence. The combination of smooth, spiced eggnog and chocolate is irresistible!


Ingredients:

For the Eggnog Filling:

  • 1/2 cup heavy cream
  • 1 cup white chocolate chips (or chopped white chocolate)
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 tbsp dark rum (optional, for an authentic eggnog flavor)
  • 1/2 cup powdered sugar

For the Chocolate Coating:

  • 8 oz semi-sweet chocolate chips (or chopped dark chocolate)
  • 1 tbsp coconut oil (optional, helps the chocolate coat smoothly)

Optional Garnish:

  • Sprinkle of ground nutmeg (for garnish)
  • White chocolate drizzle (optional)

Instructions:

1. Make the Eggnog Filling:

  • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  • Remove the cream from the heat and pour it over the white chocolate chips in a heatproof bowl. Let it sit for about 3-5 minutes to melt the chocolate.
  • Stir until the mixture is smooth and creamy. Add in the ground nutmeg, cinnamon, vanilla extract, and dark rum (if using). Stir to combine.
  • Sift in the powdered sugar to make the mixture a bit firmer and easier to roll into truffles.
  • Refrigerate the mixture for at least 1-2 hours until it’s firm enough to scoop and roll.

2. Form the Truffles:

  • Once the eggnog mixture is firm, use a spoon or a small cookie scoop to scoop out portions of the filling. Roll each portion into a ball, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  • Place the tray back into the fridge to chill for another 30 minutes to an hour.

3. Prepare the Chocolate Coating:

  • In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil together. Heat in 20-30 second intervals, stirring in between, until the chocolate is smooth and fully melted.

4. Coat the Truffles:

  • Dip each chilled eggnog truffle into the melted chocolate, coating it completely. Use a fork or dipping tool to help with dipping.
  • Place the coated truffles back onto the parchment-lined tray and refrigerate for at least 30 minutes, or until the chocolate has fully set.

5. Optional Garnish:

  • Once the truffles are set, you can sprinkle a pinch of ground nutmeg on top for a finishing touch.
  • If desired, drizzle with some white chocolate for an extra festive look.

6. Serve and Enjoy:

  • Once the chocolate has set, the truffles are ready to enjoy! Store them in an airtight container in the fridge for up to 2 weeks.

Tips:

  • Eggnog Flavor: If you prefer non-alcoholic eggnog, simply leave out the rum and use extra vanilla extract to enhance the flavor.
  • Storage: These truffles store well in the fridge and even freeze well for up to 3 months. Just be sure to store them in an airtight container.
  • Custom Flavor: Add a splash of maple syrup or swap the cinnamon and nutmeg for a pinch of allspice for a slightly different flavor profile.
