Ingredients

For the Mac and Cheese:

  • 12 oz elbow macaroni (or your favorite pasta)
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika (optional)
  • 3 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyere cheese
  • Salt and pepper to taste

For the Topping:

  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter, melted
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the macaroni according to package directions until al dente. Drain and set aside.
  2. Make the Cheese Sauce:
    • In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden and bubbly.
    • Gradually whisk in the milk and heavy cream. Stir constantly until the mixture thickens.
    • Add Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Stir in the cheddar and Gruyere cheese until melted and smooth.
  3. Combine Pasta and Sauce:
    • Add the cooked pasta to the cheese sauce, tossing to coat evenly.
  4. Assemble the Dish:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish. Pour the mac and cheese into the dish, spreading it evenly.
  5. Prepare the Topping:
    • In a small bowl, mix the panko breadcrumbs, melted butter, and Parmesan cheese. Sprinkle evenly over the mac and cheese.
  6. Bake:
    • Bake for 20-25 minutes, or until the topping is golden brown and crispy.
  7. Serve:
    • Let the mac and cheese cool for a few minutes before serving. Enjoy warm with your favorite side dishes or on its own.

Tips for Perfect Baked Mac and Cheese

  • Use Freshly Grated Cheese: Pre-shredded cheese contains additives that can affect melting. Grate your own for a smooth sauce.
  • Customize Cheeses: Swap Gruyere for mozzarella, Monterey Jack, or a sharp white cheddar.
  • Add Mix-Ins: Stir in cooked bacon, caramelized onions, or steamed broccoli for extra flavor.
  • Make Ahead: Assemble the dish (without baking) and refrigerate. Bake just before serving.
